“The Japanese have specific names for Japanese Cutting Techniques. In Japan the cutting is an ancient ART. There are some cutting techniques that are very specific to Japanese cooking, and certain dishes tastes and looks better when the ingredients are cut a certain way”

Located in Beijing, next to the lively embassies area, Kiru is a hidden Japanese barbeque restaurant during the day and a speakeasy at night. The concept behind the design start with the word Kiru, which in Japanese means “cut through”. The circulation, in epoxy red, cut the two stories building in two parts separating the main functions and breaking the typical Japanese interior into a new landscape where traditional elements of Japanese culture are displayed in an unconventional way.
